Amaranth (Amaranthus cruentus L.) was a plant of great importance for pre-Columbian people. Archaeological samples from grain amaranth were obtained in Tehuacan, Puebla, indicating that probably was originated in Central and South America. Amaranth grain production was at its peak during Maya and Aztec periods. The Mayans were perhaps the first to use it as a high-performance food, especially appreciating their nutritional value. The Aztecs used it in their religious rites. And the Incas called it “Amaranth” (Little Giant) and respected primarily for its healing powers.
 
Amaranth was, therefore, a highly appreciated food. At the same time, indigenous attributed invigorating, and even esoteric aphrodisiac properties, considering it a holy seed.
 
The nutritional benefits of amaranth seeds are very important; and had become part of food for astronauts since 1985. The content of protein is superior to other cereals (16%). Its nutritional value would be higher than that of cow milk. However, its importance lies not in the quantity but with an excellent balance of amino acids. It has an important lysine content (16.6%), essential amino acid in the human diet, which is usually more limited in other cereals. It is low in fat, healthy source of carbohydrates, which provide energy without gaining weight. Is an assistant to eradicate colon cancer and bad cholesterol.
 
We produce organic amaranth in the states of Puebla and Tlaxcala.

We have four Certified Processing Plants distributed in different parts of the country, ensuring the supply of the products required by our customers. In these plants perform tests to ensure that the requirements of the end users and the various agencies that support us are fulfilled.
 
Our production processes are geared to meeting the standards set by International Certification Agencies, among which include Organic Crop Improvement Association (US); Bioagricert (Italy), Quality Kosher Supervisors and soon the Hazard Analysis and Critical Control Points (HACCP).
